Whenever I install my weapon mods, and when I go into game, my weapons aren't visible? Whats going on?

Try using SparkIV

Adam6, there's no SparkIV for GTA SA. Downlaod Alci's IMG tool, open gta3.img from your models folder, and import your weapon .txd and .dff files, save and rebuild gta3.img.
